Healthy Muesli Bars


These delicious home made muesli bars are the perfect snack when that mid morning or afternoon hunger sets in. They are refined sugar free, are a great source of protein to keep you fuller for longer, low GI for lasting energy and can also be made gluten free.
These muesli bars take less than 10 minutes to make and are a lot healthier than store bought versions. Yay!



Ingredients -
  • 3 cups natural bircher muesli *
  • 1/2 cup LSA (linseed + almonds + sunflower seed)
  • 3 eggs *
  • 1 tsp vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup olive oil
  • 1/4 cup honey
  1. Preheat oven to 160 degrees Celsius
  2. Combine muesli, LSA, eggs, vanilla, cinnamon, olive oil and honey in a large bowl and mix thoroughly
  3. Spoon into square baking tin lined with baking paper
  4. Bake for 25 to 30 minutes until golden
  5. Leave to cool then cut into 16 pieces

* NOTES:
For gluten free, substitute the bircher muesli for 3 cups combined almond meal, seeds (pumpkin, sesame, sunflower), peanuts, almonds, walnuts, dates, cranberries and raisins. You can use all of these, or a combination of whatever you have in your pantry to make the 3 cups.
For vegans or those with egg allergies, replace eggs with mashed banana.
These bars will keep in an airtight container for up to 5 days.
Store in the fridge.
