If you follow my Facebook page and Instagram account, you will have seen the picture I posted of these delicious pancakes, and I finally have the recipe ready for you. These pancakes are gluten free, refined sugar free and are very tasty! This mixture makes approx 8 - 10 pancakes depending how big you like them. Enoy! :)

Summer is almost here and that means salad season for me. When the weather is warmer, I naturally feel like eating meals that are lighter, fresh and healthy (and still yummy).
After purchasing 'At My Table' by Chelsea Winter, I am so excited to say that I have a new favourite salad. Fresh, healthy and delicious, this salad is perfect for those warm evenings sitting outside on the deck enjoying a meal with your friends and family. This salad will also be featuring in my Christmas lunch menu (November is well and truly here so you know what that means... more festive Christmasy planning and posts).

I went to a party at a friends house and it was such a good time, everyone had put in so much effort with their costumes and it felt like we were in an American Halloween movie. These delicious home made muesli bars are the perfect snack when that mid morning or afternoon hunger sets in. They are refined sugar free, are a great source of protein to keep you fuller for longer, low GI for lasting energy and can also be made gluten free.
These muesli bars take less than 10 minutes to make and are a lot healthier than store bought versions. Yay!

I think you will all agree that the success of the carrot cake has paved the way for experimenting with other root vegetables in desserts. I had never thought of adding beetroot to something sweet before, but after watching a couple of episodes of River Cottage, I thought I should give it a try and I fell in love! I LOVE chocolate and I really like beetroot and I can honestly say that they work really well together. It is rich but yet slightly lighter than the typical fudgey brownie.
